The service usually has enough blood supply for seven days, however stocks have fallen to just three days in recent weeks.
A clinic at the Rochestown Park Hotel is open today until 8pm.
There is also a clinic tomorrow and Thursday at the Midleton Park Hotel.
The clinic at St Finbarr's Hospital is also open from Monday to Thursday.
Speaking to RedFM News, Julianne Kelly from the IBTS in Cork says stocks are critically low:
"At the moment right across all of our blood groups, we've fallen into just three days, so there is a big push to try and build that stock again, particularly coming into the new Bank Holiday weekend next month. We're seeing the hospitals are under extreme pressure at the moment, and we've seen a sustained high demand for blood. We've also had a lot of sickness in the community, particularly respiratory illnesses in the community, which has also impacted the collection of blood for the last number of weeks, and this is one of the reasons that we are running critically low across all blood groups."
