The owner of a chain of Supervalu supermarkets says the next three weeks are going to be challenging due to the impact of Covid 19 on staffing.

Liam Ryan was speaking as 102 of his employees from his four stores are out from work due to illness or isolation.

Many of his employees are students, and he says while they have been taking on extra hours to help ease the staffing crisis this is not sustainable as they will be returning to college shortly.

He's called on the Government to re-examine the isolation period rules around Covid 19 to ease the pressure on businesses.

Speaking to RedFM News Liam Ryan says he will be monitoring the situation facing his stores closely:

"Every day is different. Hopefully in the next couple of days we have, we will have part 102 coming back because they have been isolating since just before Christmas. This all broke just Christmas week effectively for us. And so we are hoping that we'll have some people back. We also have people we've had COVID and they have now formed the basis of the management team.
It's basically a day-by-day situation to see what we have at the moment."
